Veggin it up on ANZAC Day

Today is a very important day in Australia called ANZAC Day in which we remember ad honor soldiers who gave their lives in WW1.

I decided to go a bit veggie crazy for lunch in honor of this occasion(while most people are cookie pavlova and ANZAC cookies and throwing red meat on the BBQ, ugh)

 

I have made a pressure cooked vegetable medley in the bowl, on the plate some broiled shitake mushrooms, and freshly juiced carrot juice.  Now off to eat!
