I was first introduced to the acid-alkaline ideas by Herman Aihara

Just like the body maintains constant states of temperature, glucose, etc..

The following three factors are most important in determining if a food is acid-forming

If a food is very concentrated in any one or more of the above, it is very acid-forming

Now, we know that we need some protein, fat and carbohydrate

But it's the amount and quality that is important

but the protein in cheese is MUCH more concentrated than in brown rice
