Ingredients: 1 Cup pumpkin seeds 3-4 Tbsp Miso Tamari, or any light miso 2 Tbsp chia seeds, ground 1/4 Cup Ao Nori Flakes finely chopped green olives (opt)
Directions: Soak the pumpkin seeds for a few hours or overnight in salty water. Drain and rinse lightly, then place in a pot and cover with fresh water. Bring to a boil, then simmer for a few minutes, adding miso at the end. Pour the mixture into a blender, and (carefully) blend at high speed until smooth, adding more water as needed. Pour out of the blender into a bowl, and add the ground chia seeds and nori flakes. Mix well, and the seeds should thicken the mixture quite a bit.
