How are you?

I LOVE Natto! I think we had a natto appreciattion day or something like that when everyone wrote about Natto on the old Mountain Ark Forum. I have seen different recipes to make it. I tried the way with Koji a few years ago. It tasted nice, but sweet. It made my blood glucose levels (diabetes) shoot way up.

Then I found Natto starter spores. I ordered in from Goldmine Foods. I think that Mountain Ark has them too.

VERY easy to use and makes delicious Natto. Though I think you need to experiment to get the right consistency.

I used to get the one from Japanese stores without any additives, but now with the GE Soybeans, I think I will start making my own again from organic beans.

I saw some interesting recipes some time ago on making NAtto with chickpeas (sounds yummy!) and adzukis.

I have also made Tekka on several occassions. I love it. We had some beautiful burdock a few months ago. It is really hard to get here. I have to keep the Tekka under lock and key!
