Chocolate Chunky Chip Cookies :o)

Preheat oven to 170 c, 350 f

Large bowl:

1 cup whole wheat flour
1/2 cup rice flour
1/2 cup unsweetened organic cocoa powder

1/2 cup chopped toasted walnuts
(or 1/4 cup chopped dates and 1/4 cup chopped toasted walnuts)

1 cup malt sweetened chocolate chopped into small rough chunks

zest of 1/2 an orange chopped finely (or grated)

1/2 tsp baking powder (aluminum free) or baking powder subsitute

1/4 tsp ground sea salt


Small bowl:

1/2 cup coconut (or canola) oil

1/4 cup rice (or barley) syrup
2 tbs maple syrup

1 tsp vanilla

1/4 cup rice milk
1/4 cup orange juice


lightly oil baking sheet or use unbleached parchment

In a large bowl mix dry ingredients, in small bowl mix wet ingredients, gently combine the wet mixture into the dry. With either an icecream scooper or a wooden spoon, scoop the cookie dough and drop onto the baking sheet.


Bake for aprox 15 minutes or until lightly browned.

Excellent healthy alternative choco chip cookie recipe! My kids loved it and couldn't tell the difference that they were made without sugar or honey.
I used just 1/2 tsp baking powder and it worked fine.

Actually, what I meant to say was I omitted the 1/2 tsp of baking powder (the recipe says you can use 1/2 tsp bp or an alternative bp product), and they came out equally delicious, try them for yourselves!

Hiya Vera! Thanks for the lovely message. I am always making up chocolatey recipes that are much more healthy by omitting the sugar, white flour, eggs, dairy, etc..
I'm so glad your kids liked them, I made some last week and my hubby thought I fell off the health wagon and got them from the bakery!

just made this recipe with my mom and its HEAVENLY!! i didnt think anything could top our oatmeal raisin cookies or peach kanten but WOW! im a huge chocolate lover, and to satisfy my choco cravings i just had a few squares of organic vegan sugar free choclate every so often but this is so much more fun and delicious. and not a hard recipe at all either. i added some cinnamon to mine and i think it gives it a good kick. thanks!
