Spice Cookies
This recipe was inspired by a great recipe called Chef St. Jacques Spice Cookies, and by Ilanit.
Dry Ingredients 1 cup oatmeal 1/2 cup walnuts 1/4 cup hazelnuts 1/4 cup almonds 1 1/2 cups pastry flour 1/2 tsp each of cardamom, nutmeg, allspice, and cinnamon 1 tsp baking soda pinch of salt 1/2 cup raisins (cranberries, dried blueberries, or apricots OK too) Wet Ingredients 2 T lemon juice 1/2 cup light oil 1/4 cup rice syrup 1/4 cup maple syrup Combine oatmeal and nuts in a food processor or blender until coarsely chopped. Add all other dry ingredients. Combine all wet ingredients and add dry to wet. Shape into cookies. Bake at 350 F for 15 to 20 minutes. |
