macrobiotics, candida, and certain foods

I have recently been diagnosed with candida by my naturopath. I have heard mixed opinions concerning fermented foods (kim chee, miso, soy sauce, etc.) and mushrooms being no-no's for people with candida.

Can someone shed a little light on this for me?

Here's what worked for me:

Stay off of any source of mold in food, good bad or ugly for about six months. That includes cheese, mushrooms, leftovers in the fridge more than a day or so, peanuts, and the fermented foods you mentioned. Also avoid all fruit products, and any and all sweeteners. If you absolutely must have a sweet taste, which happened to me, I had to use some fake sugars. And only an occasional bit of fresh not very sweet fruit, such as some fresh berries. In the meantime, hit the candida hard with antifungals and probiotics. Then, after six months, if you feels candida symptoms are gone, introduce fermented foods slowly, and sweetened foods slower than that, and test your limits slowly. Then you will be able to go macro.... Also, see if any other foods are causing extreme allergies and avoid them during the six month period, and rotate your remaining foods as much as possible.

Oh, and an important point I forgot in the first message....

I find long-stored grain to be an especially egregious source of food mold. For about a year I had to special order all my brown rice from Kushi Institute in Becket, MA as they have a hulling machine and freshly hull the rice within about a week of your order. I can now finally eat other types of brown rice.

I still cannot tolerate the mold found in rolled or steel-cut oats, but can tolerate whole oats from a bulk supermarket.

Be a mold detective and you will get candida out of your life.... Good luck!
