difference between couscous and bulghur?

What is the difference between couscous and bulghur? I used to think that the difference was that couscous was always a refined (non-whole-grain) product, but I see now that "organic whole wheat couscous" is now being offered! Perhaps couscous is more 'processed', but if it's whole wheat then in what way exactly is it processed? Aren't they BOTH par-boiled?

Maybe couscous is processed from a wheat variety that has a very light bran?

(Maybe only the product sold as 'cracked wheat' is NOT par-boiled, and is different from the other two?)

Hi Charnes,

Couscous is just like pasta, it's a flour product -- whereas bulghar
is just coarsely cracked, but not ground, wheat.

The two Ricks and Mara,

Both bulghur and couscous are now defined in the Glossary http://www.cybermacro.com/index.php?...id=40&catid=13

Check it out!

Thank you, very much.

Good work Bruce!

Anybody is welcome to add their own terms with a definition to the Glossary like Bruce did.
