Talking bambushoots

I have heard that Japanese Hokkaido people eats lots of shoots of sasa Kurilensis a kind of bambugrass of the North.
Is it so that we can use more frequently this kind of shoots in our diet, to strenght our vitalty. I live in a Nordern country Belgium in Europe.
And how to use it on a good macrobiotic way ?
