New to this forum
Hi all. I am a personal chef with past experience cooking macrobiotic foods. I haven't done any macro cooking in 13 years, but have just taken on a client who has had digestive problems due to steroid use. I explained that I am not a nutritionist, nor am I a macro counselor, but that she could possibly get some relief if she introduced some macro foods into her diet,. She's game, but doesn't like cabbage, tofu, tempeh, can't eat any acidic foods or spicy foods.
Does anyone have any ideas as to meals I could introduce into her diet that wouldn't be considered too far from the mainstream? She wants fish and chicken. I am thinking of mashed sweet potatoes topped with scallops and a light lemon parsley sauce. Brown rice as always is a staple, but beyond steamed vegetables and rice, I can't think of anything as an introduction to pique her interest. Anything too different ( hijiki salad ! ) would be a turn off! I have these books from my macro cooking days: The Book of Whole Meals by Annamarie Colbin The Self Healing Cookbook by Kristina Turner The Natural Foods Cookbook by Mary Estella Dietary Wellness by Balch The Peaceful Cook by Harriet Kofalk as well as the standard vegetarian books of Moosewood fame among others.
