Hello, I really want to make some Miso and have heard that you can get Miso making kits but I have been unable to find one anywhere. Does anyone know where I can find one, I would be very happy for any comments. Thankyou

I haven't made miso myself, but was under the impression that all you need is a ceramic or wooden crock, a plate that fits inside, a weight, soybeans, koji starter, and time. I know that South River Miso Company from MA sells (or used to anyway) the koji through their website. Also, a book called "Wild Fermentation" by Sandor Katz has a couple recipes. Hope this helps!

Thanks alot for the information. I still can't find a Miso making kit so the advice in the e-mail is very helpful to me.

Jamie,

I don't have much time at the moment but I did a quick search on miso making kits and have not found any and if you think about it, maybe there is not very much demand for those kits, right now.

So a place to start is The Book of Miso: Savory, High ... - By William Shurtleff and Akiko Aoyagi and then the chapter Making Miso at Home and In Communities (click on "Contents" and then "More").

Oh, by the way, Wild Fermentation: The Flavor, Nutrition, and Craft of Live-Culture Foods by Sandor Ellix Katz, does have a good little section on miso making, including making Red and Sweet misos.

Thanks very very much for the help bruce. I agree that there probably isn't much of a demand for Miso making kits right now because it would be easy to find them and I still haven't found one yet. Thanks for the excellent link for the Book of Miso, I briefly looked at the Making Miso chapter and it looks like everything I need is there. Awesome! I also didn't know about Google book search which looks very handy so thats a bonus!
