I just wanted to say hello to all. I practice and teach in the New York City area and have been visitng this site for a while. I find this site a great resource for infomration even those who have teaching and practicing for awhile.

Andy here from Cold Spring HArbor, NY. Funny...I just posted to someone else from LI how I couldnt find any one near by that teaches. Manhatten is kind of a shlep for just a few hour class but who knows.
Be nice to find someone from LI close by. I found someone by the name of Will Klenk and wrote him but haven't heard back yet. I vounteeded the new kitchen I just finished building asking him if he knew of anyone that wanted to be part of a small group he might teach cutting down on costs for the student and building up the teacher clientl.
You ever on LI?
I'm closing in on finishing this circa:1680 house and the kitchen I added on is incredable IMHO. I did all the work myself including fabricating the soapstone counters and island.
I'll post some pic.

andy, your kitchen sounds wonderful/I have private clients all over the tri-state area, but none on the Island right now. Cold Spring \harbor is wonderful. if you put a group together, we could talk about my coming out...let\s stay in touch and happy new year.

Quick question as long as I have you here : )
For my ten day brown rice thigamajiggy...How much water you recommend to cook the rice in? I'm thinking more than 2:1 being its all I'm eating. I could only find medium grain. they were out of short grain.
I'm using a pressure cooker so does thirty minutes sound about right?
I think I need it mushier than normal and to chew it up even more than I might in order to get as many nutrients as possible out of those lil' suckers.
Whatcha think?
