groats

Can someone please tell me how to cook groats? I've used them ground up in a cookie recipe, but that's it. And being that I've had the IBS problem I don't want to cook them incorrectly and end up with a stomach ache for 5 days. Thanks!

What kind of groats - buckwheat? Whole? Toasted or raw?

If you do mean buckwheat (never heard of anyone using them in cookies before, that's why I wonder about it), and if it's not already roasted, dry roast it in a skillet on a low flame, then add to water which has been boiled and is simmering. Add salt. Simmer for 15-20 minutes.

The quantity of water to use for fluffy buckwheat would be about 3-4 times the volume of dry buckwheat.

If you were referring to oats, they'll need longer cooking. I've even cooked them overnight in the winter. Toasting first gives a real nice flavor.

I apologize for not specifying....yes, I was referring to oats. That way of cooking them sounds wonderful, the toasting. I've been craving grains this week....the last three I couldn't get enough broccoli. Thanks so much for replying! xxoo

Hiya Curious. A little over a year ago I met my macrobiotic counselor (Lino Stanchich) thru my holistic intern and learned soooo much but didn't commit myself completely. My IBS got MUCH worse and I met with him again in January. It was to the point that I was not really leaving the house except to work, was very depressed and hopeless. I am telling you, the day after my appointment and doing EXACTLY what he told me to do I feel 98% better. I've had enough kuzu soup to last a lifetime! To me this is a miracle and an answer to prayers because I have been to doctor after doctor and nobody had ever mentioned changing my diet and now not only have I found relief from IBS but am already reaping all of the other benefits as well. I'd already been a vegetarian for a few years before this and was eating what I thought was pretty darn healthy but little did I know....I just thank God and macrobiotics every single day. xxoo

Mayzee,
That's so good to hear. I've had good results on the macrobiotic diet too but the problem is that I can get constipated easily and bloated if I eat too many grains. Can you be more exact about which foods you prefer? I'm so happy to hear that you've had success with this.

I'm doing 75% veg's (mostly above ground), 1/4 c grains, a little sesame oil, kuzu every other day or so...sea veg 3 times a day, a cooked apple or pear once in awhile, no dry fruit, 1-2 Tbsp beans, 1-2 tsp seeds a day. And all the other obvious things. If I stick to this I have absolutely no problems. I just feel like I'm absolutely starved lately, and that wasn't till recently which is so *%$@ frustrating. To be perfectly honest if my alternative wasn't to be so sick I don't know if I could do this everyday. I mean, I love the benefits but *sigh*.... Does anyone know what happened to the "Macro Dating"? xxoo

Hi,
Whole grains are easy to cook on the stovetop (as you would cook rice or pasta), or in a countertop steamer. I always cook one pound (2½ cups) of whole grains at a time (as much as my steamer will hold), since they keep well -- refrigerated or frozen. Leftovers can be reheated in a microwave or used in salads. I make my own "instant grains" by packaging ½-1 cup portions in baggies and storing them in the freezer. They take a minute or less to thaw in the microwave. For more information go to this site:
