My New Favorite Lotus Seed Stew
Lotus seeds are such an uncommon ingredient, it is difficult to know what to do with them. I love them. Not exactly a bean, they are easier to digest and lighter, but have a more satisfying appeal than eating seeds of other varieties. They become creamier the longer they are cooked but I wouldn't want to turn them to mush for this dish.
Drain the soaking lotus seeds and place in a pot with the water and kombu and bring to a boil. Turn the heat to low and with a lid on the pot, simmer for 30-45 minutes until the beans are soft. Then add the rest of the ingredients and simmer until soft and the water is reduced into a thick creamy sauce.

- 1 Cup Lotus seeds soaked for several hours
- 2 Cups + good water
- 1" strip Kombu sea vegetable
- 1 – 2 tsp. barley miso paste
- 1 – 2 carrots, chopped
- 1 small onion, chopped
- 2 garlic cloves, chopped
- a splash of Mirin
- a splash of Rice Bran Oil

lotus seedsWished I'd seen this earlier. I was lucky to have some lotus seeds, but as you mentioned, they are unusual, so didn't know what to do with them, and sadly they got infested.
I do have dried lotus and have the same problem, not sure what to do with them. |
