Hi Hans,
I've only heard dulse referred to as "dulse". It's a purple/red seaweed, that doesn't have to be cooked much. Some people marinate it with cucumbers. It's also good roasted for a few minutes in a dry skillet. I don't believe that it's used as often in macrobiotic cooking as wakame, kombu, & arame. Sorry that I don't know about its availability in Germany. Dottie Dottie |

Dulse Palmaria palmata (Linnaeus) Kuntze grows in the Baltic Sea as well: "Generally distributed around the British Isles. Europe: Portugal, Atlantic coasts of Spain and France, Baltic Sea, Norway, Faroes, Spitzbergen and Iceland. Greenland. Atlantic coasts of North America: Canada, Maine, New Hampshire, Massachusetts, Rhode Island, Connecticut and New Jersey. Further afield: Arctic Sea from the White Sea and Baffin Bay. Pacific coasts of North America, Alaska to California, Japan and Korea." I don't know where is Germany you can purchase it but on your side of the Atlantic, it can be purchased at Clearspring and in the Western Hemisphere it can be had through Simply Natural!
