Home Made Soy Milk and Okara
In my blog during January, I learned to make home made soy milk without a soy milk maker.
You also get okara, which makes light and delicious felafel!The blog has a link to a video on YouTube I learned this from. Soak soy beans over night (I even gave it a night and half a day) Puree in batches in a blender with more water, make sure to cover the beans. It will become beany smoothies. I found I needed to give it an extra inch of water. Pour into a pot and bring to a boil. Note from me, use low heat and don't cover it >.> Skim off the foam. Mine was a really thick foam and I was scooping out okara with it, so I added another 2 cups of water and stirred and let it reheat, then it was like the video's foam. Light. Pour out over cheesecloth firmly attached to another pot. (Chip clips don't work that well btw... go to the dollar store and get office clips like they used). Squeeze off the okara in the cheesecloth, remove from cheesecloth and store in the fridge in Tupperware. You now have a lovely pot of soy milk sitting there. Pour off (I used a mixing bowl with a lip since I lack a funnel) into mason jars. Before I poured it off I added raw sugar and vanilla to taste. It'll absorb the flavors easier when its warm. Just add a little, taste it, add more if needed, etc. ![]()
