I love home made sauerkraut!!!
Once you make it yourself you won't want to ever eat the store bought kind again! Home made is wonderful!
Bruce is right; his recipe is basically what I do. Also, if you have The Changing Seasons, or Aveline Kushi's Complete Guide to Macrobiotic Cooking, sauerkraut recipes appear in them as well.
