I imagine that the food that you will have the hardest time finding is whole grains, especially brown rice and depending on what region you are visiting (a yoga teacher at Masao's Kitchen on Waltham, MA, yesterday, told me that India has climates ranging from Scandinavian to tropical Africa) you'll want to shop accordingly.
