Macro isn't in order to substitute
It's to go a different route altogether
Somewhere you may find the philosophy behind it - there are different levels of understanding - and one does need to go through them all to get to the ones above
So that was just a background for you to realize there's alot more than just taste sensations awaiting you if you decide to travel this road
but in the meanwhile, you'll just have to explore the sensorial level that you're on - and the best way of course if you want the best, is to go to the best - I'm sure there must be some amazing cooks in the NY area
btw, regarding the levels, just because one "reaches" a higher level, it doesn't mean one doesn't go to all the levels continually - I love sensorial, I love when the food sensations just explode in my mouth, as you say - and I've had it often with macro food - I'm lucky to be around some good cooks, and I also love cooking, so I enjoy greatly alot of what comes out of my kitchen.
But I wouldn't look for substitutions - just look to enjoy.
