I think the emphasis is on grains because they're the most balanced (yin vs. yang--although they're slightly more yang) food. They contain virtually all the complex carbs, proteins, vitamines, and minerals one needs. Sea vegetables, legumes, and land vegetables can then be added for some variety. I don't know much about acid vs. alkaline yet, but maybe someone can enlighten me.
