Hi everyone. I noticed no one posted anything. These aren't cookie recipes I came up with but here are a few of my favorite ones that I use. Enjoy!
Buttery Tea Cookies
1 1/3 c. w/w pastry flour
2 tsp arrowroot
1/4 tsp. sea salt
1/3 c. corn oil
1/4 c. water
3 t. pure maple syrup
1/4 tsp. pure vanilla
Preheat oven to 350. Mix all ingredients well in mixing bowl. Take 1 level measuring tablespoon of batter and roll it into a ball. Place on ungreased cookie sheet, flattening it into a 2 1/4 inch round. Score the top of each cookie with a plus sign. Bake for 30 minutes or until tops are golden brown and edges are deep brown. Transfer to wire rack to cool. Makes a bakers dozen.
Tahini Oatmeal Cookies
2c. rolled oats
1/4 tsp. sea salt
1/4 c. tahani
1/2 c. barley malt
1/4 c. pure maple syrup
1 1/4 tsp pure vanilla
3 T. water
1/3 cup tamari roasted sunflower seeds (recipe follows)
touch of sesame oil
Make the tamari roasted sunflower seeds and set aside. Preheat oven to 350. Put rest of ingredients in large bowl and blend well. Stir in sunflower seeds. Let cookie batter rest 1/2 hour. Lightly oil cookie sheet with sesame oil. Spoon cookies onto sheet and shape into 2 inch rounds. Bake for 25-30 minutes until golden brown. Do not overbake! Transfer to wire cooling rack and cook. They are done cooling when the center becomes firm. Makes 1 dozen cookies.
