The Scottish way of making porridge, where it was the staple grain, was to add 4 to 5 parts of water to the oats and cook it for hours, stirring it regularly. Oats will absorb an awful lot of water and if you don't add it when cooking then it has to come from somewhere and this is why it can dry out your digestion.
