You are doing amazingly well for a beginner!!!!!!! The next step is to see how you feel. You really don't have to go the calorie counting in this way of life - now you have new concepts you can put your energies into - is this more yin or more yang? how do I feel? what do I need to get more centered?
Or if that's a little bit advanced for now (I can't tell you how impressed I am with your dedication!!!) just sit quietly and chew slowly til the food in your mouth is liquidy (if you can), give appreciation for the food before/after eating and for anything else in your life. Eat what is comfortable for you - and if you are worried about any personal conditions, see if you can find a good mb counselor near you for a consultation to help fine tune your food and your way of life.
I have heard from many sources that it is better to eat less than more - I'm certainly not an expert, but if I were you, I certainly wouldn't worry about making sure to eat your plate clean. Again I stress eat according to how you feel. But do be careful not to get into the practice of eating leftovers, especially soups and vegetables. Perhaps if it's too much food, cook a smaller quantity til it feels right.
I read your introduction and think it's a blessing you're starting so young - I wish you only a "great life."
