This is a favorite of my kids, and great if you need a sweet fix, but not an everyday food. I also use all organic ingredients.

Rice pudding:

6 cups soy/rice milk plain or vanilla is fine (Eden is great...try their Eden blend which is rice and soy milk)

1/3 c. brown rice syrup

2 cups cooked short grain brown rice (I like to use 1 1/2c brown and 1/2c sweet brown rice)

1/4 raisins/other dried fruits if you can eat them
2 TB vanilla
1/2 tsp cinnamon

Combine 4c. milk and syrup, cover and bring to a simmer over moderate heat. stir in rice and raisins, reduce heat to low and simmer partially covered, stirring frequently to prevent sticking, about 40-45 mins, or until think and creamy. Add remianing 2 cups of milk and cook for 15-20 more mins. remove from heat and stir in vanilla.

pour into a bowl and let cool for 15-20 mins. sprinkle with cinna mon and cover with plastic wrap and chill for ~an hour. It will thicken as it cools
