Cruises can be really difficult, as there are many "activities" centered around food. Most of it is conventional and many cruise ships have a very late dinner and then a midnight buffet spread of sorts each night.
The only thing I can suggest here, if you can't get on the wholistic cruise with the macro folks that Bruce suggested , is to bring as much food as you can and have the strength to pass up all of the "extras."
My suggestions for good macro snacks and travel foods would be:
rice balls, macro sushi -- they may have a sushi bar either in one of the restaurants on board or at one of the buffets. Bring your own gomashio, nori, ume plums, kuzu, maybe a portable cookstove with butane and a pot to stow away in your cabin. However, it will most likely NOT be high quality macro food nor will it be organic.
You will probably be able to order fish if you eat it. You may be able to get them to steam or boil some greens or vegetables. Keep away from the butter, potatoes, cream sauces, chocolate buffets, and desserts.
