HAZELNUT OAT CREAM WITH MAPLE SYRUP by Holly Davis

Serves 6 to 8
Season: all
- 2 cups leftover cold porridge or 1/2 cup (3oz/85g) rolled oats, cooked to a porridge
- 1/2 cup (2 1/2 oz / 80 g) hazelnuts, lightly roasted
- 2 teaspoons ground
cinnamon
- 1/2 cup (4 fl oz / 125 ml) maple syrup
- 1 1/2 cups (12 fl oz / 375 ml) soy milk
- puree porridge in a blender
- add the hazelnuts, cinnamon and maple syrup and blend
- thin to desired consistency with the soy milk
If you are making this with hot porridge, it will thicken as it cools.
