GARBANZO, SWEET CORN AND CILANTRO CASSEROLE by Holly Davis

The basis for this dish was taught to me by Eli, a beautiful Israeli woman who worked with us at Iku for several years. To me, it is a magic combination of flavors and textures, what I call a marriage of ingredients - those made for one another.

Serves 6 Season: summer

  • 1 1/4 cups garbanzos (chickpeas), soaked in cold water 4 to 12 hours
  • 2 tablespoons olive oil
  • 3 yellow (brown) onions, cut into wedges
  • 1 leek, green part only, cut into thick slices, washed and drained
  • 2 orange sweet potatoes, unpeeled, cut into chunks
  • 1 large cob sweet corn, kernels cut off
  • 3 large cloves garlic, finely chopped and kept separate
  • 1 1/2 bunches cilantro (coriander), leaves roughly chopped, stems finely chopped and kept seperate from each other
  • 6 cups (1.5 L) stock
  • 2 tablespoons umeboshi vinegar
  • 1/2 teaspoons salt
  1. cook the garbanzos carefully until they are quite soft (this should take approximately 1 hour), drain well and set aside
  2. heat a large, deep frying pan
  3. pour in the oil
  4. add the onion wedges and fry for 5 minutes
  5. add the leek to the pan and continue to cook
  6. add the sweet potatoes and the corn kernels
  7. turn the heat to low
  8. add the garlic and cilantro stems and saute with the vegetables
  9. add the stock, umeboshi vinegar, and salt
  10. simmer, uncovered, until the liquid has reduced by half
  11. remove one-third of the mixture
  12. blend and return to the pan
  13. fold in the cilantro leaves
  14. reheat and serve with sourdough bread, steamed rice or millet
