Sweet Potato Nut Bread
The recipe appears courtesy of Grainaissance whose Almond Shake Amazake is used to create this delicious tasting bread.
- 2 cups raisins
- 2 cups apple cider or apple juice
- 1 cup Grainaissance Almond Shake Amazake
- 1-1/2 cup sweet potatoes or yams, mashed (either fresh or canned)
- 1/2 cup corn oil
- 5 cups whole wheat pastry flour
- 1 tsp.
cinnamon
- 1/2 tsp. nutmeg
- 1/2-3/4 tsp.
sea salt
- 2 Tbsp. baking powder
- 1/2-1 cup
walnuts, chopped
Place half the cider and half the raisins in small saucepan. Bring to boil and simmer 10 minutes. Puree in a blender with sweet potatoes and Amazake. Add oil and remaining cider. Blend well. In a large mixing bowl combine dry ingredients, remaining raisins, and walnuts. Combine liquid and dry mixtures. Spoon into 2 oiled bread pans and bake 350° F for 50 minutes. Let cool, slice and serve either plain or with tofu cream cheese.
