If you have not treated yourself yet to the wonderful Mitoku Sweet n' Sour Chutney, item sku 88364, found in Concentrates section of this site when you click on Macrobiotic Foods, you are missing out on something very special.

When you read the blurb about all the ways it is used, you might be moved to have some on hand for a purpose you find that meets your needs for a later time.

I like to cook a few dehydrated Just Strawberries brand strawberries, with very little water and a few grains of salt and add some on top of my steamed Macrobiotic quality sourdough bread (no yeast), a thin layer of my home prepared sesame butter, a thin layer of the Sweet 'n Sour Chutney and then a few of the rehydrated, cooked strawberries on top of it all.

If you are tempted to put the cooked strawberries into your container of the Chutney and you don't use it within a short week, it will begin to bubble up and taste spikey. The berries ferment the Chutney because they are too sweet and upset the balance of the umeboshi plum used to balance the rice malt and mirin.

As my grandson says, Noom Noom...:)

Kindest, Dorcas Gerace
