Strawberry Almond Cookies by Bita
Here is a groovy recipe for a whole grain, unleavened cookie, meaning these use no baking powder at all, which is considered rather unhealthy. These cookies are perfect for Spring, with a cup of green tea.

Bita is a vegan and macrobiotic baker for her business Baked By Bita and also cooks macrobiotic meals for her clients. Bita was raised in a macrobiotic home and wrote her senior thesis in college about macrobiotics and the yin-yang theory of food. She also currently teaches cooking classes at Sur La Table culinary store locations throughout the state, along with an intermediate macrobiotic cooking class at The Natural Gourmet Cooking School in NYC run by Annemarie Colbin. Bita has recently completed training at the Institute for Integrative Nutrition.

Makes about 8 cookies.
Ingredients:
- 1/2 cup ground almonds
- 1 cup ground oats
- 1 cup whole wheat pastry flour
- pinch of
sea salt
- 1/4 tea. ground cardamom
- 1/3 cup maple syrup
- 1/3 cup brown rice syrup
- 2 tb. safflower oil
- 1/2 cup plus 2 tb. naturally sweetened strawberry jam
- 1 tea. vanilla
Directions:
- Preheat oven to 350F, and line baking sheet with parchment paper.
- Mix dry ingredients in a large bowl until combined.
- In a medium bowl, mix wet ingredients, including jam.
- Pour wet mixture into dry mixture, and mix with a fork until combined.
- Using a cookie scoop, form tablespoon pieces of dough on parchment.
- Using the bottom of a wet coffee mug, flatten each cookie into a disk.
- Bake for 20 minutes, or until light golden brown.
- Let cool on cooling rack.
