Heart Healthy Cake by Susan Marque

A healthy cake? Well, as cakes go, this one is moist and full of flavor without strong sweetener, very little oil and even no eggs.

Give it a try with your favorite fruit topping, chocolate sauce or vanilla frosting. Use it as a base for an ice cream sundae or even add chocolate chips to the batter.

Ingredients:

  • 1 1/2 Cups Barley flour (you may substitute your favorite flour but the barley adds to the moistness and flavor of the cake.)
  • 2 tsp. baking powder
  • 1/4 tsp. sea salt
  • 1 tsp. cinnamon (optional)
  • 1/2 tsp. nutmeg (optional
  • 2 Tablespoons flax seeds (the golden ones are what I used)
  • 3/4 Cup Rice milk (Rice Dream brand)
  • 6 Tablespoons brown rice syrup
  • 2 Tablespoons maple syrup
  • 1 1/2 tsp. vanilla extract.

Instructions:

  1. Preheat oven to 350°
  2. Oil a 9" pie plate
  3. Put the rice milk and flax seeds in a blender and blend for several minutes.
  4. Add the rest of the wet ingredients to the blender and blend for several more minutes.
  5. In a mixing bowl, mix the flour, sea salt, baking powder and spices if you are using them.
  6. Add the wet ingredients to the dry ingredients and stir until well mixed. (please do not over mix the ingredients as that can produce a tougher product)
  7. Pour the batter into the pan and bake for 25 minutes. The cake will turn a nice golden brown.

Fruit Sauce For Cake

Ingredients:

  • 1 Cup of your favorite fruit, (rinsed, sorted and chopped if necessary)
  • 1/2 Cup Brown rice syrup
  • 1/3 Cup water
  • 1-2 Tablespoons Kudzu (mixed in just enough water to make a slurry) pinch of sea salt

Instructions:

  1. Place the fruit, syrup, water and salt in a sauce pan and bring to a boil. Simmer until the fruit is tender. (for most that will only be 5-10 minutes.) Add the Kudzu slurry stirring constantly to thicken. Adjust the amount of water to have the consistency you desire.
  2. Add 1 tsp. of vanilla extract if you like or a splash of lemon juice to enhance the flavor.
